PINOCCHIO RESTAURANT AND THE ITALIAN SCHOOL OF COOKING FEATURED IN THE IRISH INDEPENDENT

MORE INTERNATIONAL RESTAURANTS USING IRISH PRODUCE.

The core concept of the Mediterranean diet is to use only the best local and fresh ingredients to enhance the taste through a pefect balance of blending flavours; Pinocchio in Dublin is no different.
"We truly believe in this approach so we always prefer to use everything that is available from the irish farms and markets", said Giuseppe Crupi, Director of The Italian School of Cookery. "Following this philosophy our chefs in Pinocchio use all these precious Irish products with their superb taste to achieve the recipes of the purest Italian tradition.
"Over the years we discovered that Ireland hides a great treasure in its fields and seas: free range beef and lamb and then lobster and scallops from County Down, monkfish from County Louth or mussels from County Sligo, just to name a few," said Giuseppe.
