PROGRAM: duration: 4 hours (with a 20 minutes break in the middle)
Macaroons: Learn how to make an assortment of colorful macaroon with a tender interior. Milk chocolate and cinnamon mousse cake with mandarin ice cream: learn how to make this individual mousse cake as a restaurant option. You will learn the basics recipes through this mousse cake and how to assemble for presentation. Chocolate tempering techniques: learn how to temper chocolate to create different chocolate decoration to enhance your desserts.
Carlos is currently working as Head Pastry Chef at Harvey Nichols Edinburgh and contributing for SQUIRES KITCHEN MAGAZINE “cakes and sugarcraft” with different sugar figurines.
Carlos is doing sugarcraft classes and demonstration throughout schools all over Europe.
